Elizabeth Heiskell has long been one of my favorite chefs and TV personalities! When I had the opportunity to feature cooking segments from the Today show, I shared her recipes every chance I could get! She is not only an amazing chef, but she has such a warm personality and is so much fun! Elizabeth Heiskell has the power to put anyone in a good mood. This week she joined me for our second annual interview in honor of the Super Bowl! She shared absolutely amazing snack recipes, a delicious main course and one of my favorite drink recipes ever. Elizabeth also shared Super Bowl winning tips for throwing the best Super Bowl LIV party!

Candie Anderson: With the Super Bowl a week away, do you have any snack recipes you can share with us for the big game?

Elizabeth Heiskell: “Candie, you know me better than that! You know I’ve got lots of snack recipes. We came up with this grazing board. It is like a snack extravaganza. It’s everything that you can possibly imagine or that your guests could ever want. We’ve got beautiful raw vegetables, fruit and charcuterie. 

My favorite Farm Rich loaded potato skins – they are scooped out Idaho potatoes, they filled them with great cheddar cheese and bacon. If you like things a little bit spicier we’ve included these jalapeño peppers that have been stuffed with cream cheese that are also divine. All of that is so wonderful dipped in this kicked up ranch dressing that we came up with.

The whole point of this, Candie is to make it super simple, very straightforward and that’s what this dip is. You just take a ranch dip recipe (or you can even buy your ranch dressing if you prefer) add some chipotle peppers to it, mix it up really well and it is going to take your dip to the next level.”

 

 

The Best Main Course For Your Super Bowl Party

Elizabeth Heiskell: “I just like to nibble and nosh all day. My husband on the other hand, he would look at this plow through it and then be like where’s the rest of the food? That’s why we came up with these amazing cheesy Parm Sandwiches. It’s just Farm Rich mozzarella sticks, we cook those off until they get nice and golden brown on the outside and ooey gooey in the middle. Put them on a hoagie roll with some marinara sauce and a chicken cutlet. Honey, these are to die for.

They’re perfect for any game day. Honestly this is a great recipe if you’re short on time and just need to get a weeknight dinner on the table. Your family and friends will love this recipe.”

 

How To Make A Super Bowl Winning Beer Margarita Recipe

Candie Anderson: Every party needs a great drink. Do you have any Super Bowl winning beverage recipes you can share with us?

Elizabeth Heiskell: Again, Candie, you know me better than that. You know I love a cocktail and I have one. One of the things that I have a hard time with is deciding what I want to drink, so I took two of my favorite things – beer and Margaritas and I combined them. It’s a Beer-Rita. It’s super fun and we can make these ahead of time. What you’re going to do is just get a nice big pitcher, and take a can of frozen limeade concentrate (you can get this at the grocery store). Pour it into your pitcher, top it with tequila and light beer. Stir it really well and serve it in some really fun glasses just to make it festive over a little bit of ice. You have your limes for garnish. There is not one person in your house that is not going to enjoy these tremendously. You’re going to enjoy them more than anybody because the good news is we made them ahead of time. You’re not going to have to jump up and run and make a cocktail every time one of your friends drinks needs refreshing and that really is the name of the game. You want to enjoy this party as much as your guests do.”

Candie Anderson: Do you have any additional party tips that you can share with us?

Elizabeth Heiskell: “Going back to that, that’s the thing is after you put in all of this work you want to make sure that you have a nice time too. Don’t be afraid to ask for help. There is no reason in the world that you should be the only one working and sweating in the kitchen that day. Frankly, Candie the only people that need to be sweating are the people that are on that field. You don’t need to be working and sweating. Get things done ahead of time. Ask your friends to help. There’s no reason in the world that they can’t get involved. They really do want to help. Make sure you enlist all of your friends and guests to bring something and then that way you can really enjoy it just as much as everyone else.”
