Michael Symon is one of my favorite celebrity chefs and TV hosts on the planet. A few years ago I had the joy of interviewing him. He shared tips on how to prepare a fabulous summer inspired meal for family and friends! Like many of you, I miss his hit TV show “The Chew.” I frequently shared recipes and videos on how to prepare the amazing dishes that Clinton Kelly, and chefs Michael Symon, and Carla Hall made on the show. This morning, chef Michael Symon surprised us all by joining Savannah Guthrie and Jenna Bush Hager on the hit show “Today with Hoda and Jenna.” Did you have a chance to watch? Chef Michael Symon made pan-roasted chicken thighs with ramps, peas and mushrooms, and lemon spaghetti with snow peas. Doesn’t that sound absolutely fabulous?
According to Jenna Bush Hager, chef Michael Symon owns 17 amazing restaurants across the country! Have you ever been to one? If you’re like me and don’t have any of chef Symon’s restaurants nearby, you’ll be pleased to learn that you can cook just like him! This morning he shared two fantastic recipes that only call for five ingredients. I don’t know about you, but I am not a fan of recipes that call for tons of ingredients! These dishes are right up my alley.

How To Prepare Chef Michael Symon’s Pan-Roasted Chicken Thighs
Chef Michael Symon told Jenna Bush Hager and Savannah Guthrie that you will salt both sides of the chicken thighs. If you’d like to add a little ground pepper, you can do so! One of the biggest mistakes chef Symon mentioned was people “don’t use enough salt.” He also shared that the reason he used chicken thighs is because it’s cheaper and there is more flavor. After he took the chicken off the stove, he put it in the oven for about 12 minutes. Make sure you have a thermometer! He mentioned the degree you need to cook the chicken to in the video.
The next step is adding the bottom of the ramp bulb, leaves of the ramp, and shiitake mushrooms, peas, and salt to the chicken fat which you’ll leave in the pan. Have you ever used ramp? According to chef Michael Symon it’s a wild leek. Chef Michael Symon’s Vegetarian Spaghetti with Pea Pods and Lemon
If there’s one thing I loved that chef Michael Symon made on “The Chew” it was definitely his amazing pasta dishes. He mentioned that he is Greek and Sicilian “and pasta is one of his favorite things to eat. His wife is a vegetarian, and he made an amazing vegetarian spaghetti with pea pods and lemon that is perfect for the vegetarian in your life and on meatless Monday! Vegetarian Spaghetti with Pea Pods and Lemon Ingredients

- Chili Flakes
- Pasta Water
- Snow Peas
How To Prepare Vegetarian Spaghetti with Pea Pods with Lemon
To make the vegetarian spaghetti with pea pods with lemon, chef Michael Symon added snow peas, spring peas, chili flakes and olive oil to a pan. He then added lemon zest, and used the pasta water to the pan. Once he did that, he added the spaghetti to the pan. Doesn’t this sound very springy and delicious? I can’t wait to try it! I’ve been hooked on lemon and mint as of late, so this dish is right up my alley.
