As someone who loves tomatoes, olives, feta cheese, olive oil (and more), I am so excited to learn as many healthy and delicious summer inspired Mediterranean dishes as possible. This morning on the Today show, Rui Correia, executive chef of Douro Restaurant Bar in Greenwich, Connecticut, stopped by to show Today’s Take hosts Jenna Bush Hager, Sheinelle Jones, and Al Roker how to make a healthy Mediterranean grilled chicken with honey lemon yogurt sauce. To make Douro restaurant executive chef Rui Correia’s healthy Mediterranean grilled chicken with honey lemon yogurt sauce, he told Al Roker that you will need these ingredients and materials:
- chicken breast
- string beans
- red onions
- red wine vinegar
- mixed olives
- feta cheese
- salt and pepper
- Greek yogurt
- lemon juice
- olive oil
- indoor grill (or outdoor, if you have it)
