Sadly, 83% of those estimated to have the disease are either undiagnosed or misdiagnosed. The ingestion of gluten leads to damage in the small intestine, and when the small intestine is damaged, it is difficult for the body to absorb nutrients. Left untreated, people with celiac disease are at risk for other conditions.
