The 2016 Rio Olympics have been so exciting, I don’t want them to end! I don’t know who has inspired me more – the GOAT Michael Phelps, gymnast Simone Biles, The Final Five, 41 year old Oksana Chusovitina, or beach volleyball stars Kerri Walsh Jennings and April Ross?! It’s easy to say my days and nights are filled with Olympic coverage. Another amazing thing about the Rio Olympics is the fabulous Brazilian food, especially the delicious and very decadent desserts! This morning on the Today show, my faves – Natalie Morales, Al Roker and Billy Bush were joined by Rio-born cookbook author and lifestyle expert Leticia Moreinos Schwartz (at the Copacabana) who made an amazing Molten Brigadeiro Cake, Coconut Mousse: It’s Dessert Brazilian Style!
