I absolutely love homemade Mexican food, especially homemade enchiladas. My grandma who was born in Jalisco used to make them for us all the time, they were absolutely delicious, but unfortunately they weren’t healthy by any means! This morning on the Today show, Today Nutritionist Joy Bauer stopped by the famed morning program to show Kathie Lee Gifford and Hoda Kotb how to make healthy chicken enchiladas in a slow cooker with less than 400 calories! That wasn’t the only delicious dish she prepared, Joy also made “healthy” rice krispie treats. YUM!
To make the healthy chicken enchiladas, Joy Bauer stated you’ll need a slow cooker, four chicken breasts, salsa, chopped onion, garlic, taco seasoning, enchilada sauce, corn tortillas, baking dish, and reduced fat cheese. Believe it or not but two of these enchiladas are only “313 calories.”
If you love rice krispie treats, but don’t like the calories, you’re in luck. The next dish/dessert that Joy Bauer made were healthy rice krispie treats with whipped butter, light popcorn, chocolate chips, and mini marshmallows.
