With back to school season nearly officially here, the Today show has been sharing delicious, healthy meal ideas for parents and kids this week. This morning Kathie Lee Gifford and Hoda Kotb were joined by cookbook author, Aarti Sequeira who made delicious gluten free pea-lafels (falafels) made out of peas and edamame.
To make the fun, healthy protein-packed bright green pea-lafels, Aarti Sequeira dished that you’ll need a blender, frozen peas, edamame, shallots, garlic, fennel, coriander seeds, olive oil, salt, chickpea flour, sunflower oil, Greek yogurt and tomato.
