It’s Today food vegetable challenge week, and I really wish it wasn’t ending! I love home grown veggies, and am so excited to prepare all of the amazing zucchini, eggplant and cauliflower the Today food contributors have been featuring this week. If you love artichoke, you’re in for a real treat! Today show weather anchor Al Roker made warm artichoke and spinach dip, and (marinated grilled artichokes with blue cheese vinaigrette not shown, but the recipe is on the Today food website) on the show this morning.
To make Al Roker’s amazing warm artichoke and spinach dip, he mentioned you’ll need: canned artichoke, bread crumbs, parmesan, bacon, baby spinach leaves, olive oil, yellow onion, garlic, cream cheese, sharp cheddar cheese, Worcestershire sauce, sour cream, lemons, salt, pepper, and a saute pan.
