Have you thought about going vegan or at least incorporating a few vegan meals from time to time? One of our favorite nutritionists and Today show contributors stopped the Today show this morning to show Willie Geist, Natalie Morales, Al Roker, Tamron Hall and the hilarious Norm MacDonald how to make a few delicious vegan meals including bagel and bean cheese (for the bagel and cream cheese breakfast lover), vegan no-dairy, macaroni and cashew cheese, buffalo wings without the chicken (Joy used cauliflower instead), and banana chocolate custard!
To make the bagel and bean cheese, Joy Bauer mentioned that you’ll need canned Cannellini beans, a masher to mash your beans, balsamic vinegar, extra virgin olive oil, seasonings – sage, basil, garlic, crushed red pepper, salt. If you’re eager to make her vegan macaroni and cashew cheese, Joy dished that you’ll need soaked cashews, canned Cannellini beans, nutritional yeast, apple cider vinegar, lemon, rosemary, salt.
