Authentic Mexican food is not only the perfect party food on New Year’s Eve, but it’s also fabulous on New Year’s Day (and every day after)! Cooking Channel “Taco Trip” host and renowned chef, Aaron Sanchez stopped by the “Today” show this morning to show Willie Geist and Dylan Dreyer how to prepare his favorite homemade salsa, delicious zucchini quesadillas and Mexican Brownies recipes. Yum! Don’t these dishes sound amazing? I can’t wait to make the quesadillas tomorrow, especially since I bought zucchini at the grocery store today. 🙂
To make chef Aaron Sanchez’s chicken tostadas, you’ll need chicken (of course), tomatoes, onions, garlic, cilantro, chile de arbol (similar to a cayenne pepper) and a trusty food processor to prepare his delicious homemade salsa. PS You can buy tostadas or fry corn tortillas.
To make the Cooking Channel host’s zucchini quesadillas, you’ll need flour tortillas (homemade flour tortillas are the BEST), Monterey Jack cheese, sauteed zucchini, roasted poblano peppers, and whatever else you’d like to add to to this scrumptious dish.
