EasyLunchBoxes.com creator Kelly Lester stopped by this morning to share her favorite tips for getting kids involved in meal planning, and her TOP lunchtime snacks!
Kelly Lester of EasyLunchBoxes.com shares delicious meal ideas and tips for getting the kids involved in the kitchen, just in time for back to school!
Candace Rose: With many parents on the go, it can be hard to create a healthy and delicious meal every night. Do you have any shortcuts to share with us today?
Kelly Lester: “I sure do. The main thing is to get kids involved in planning and preparing food, this way they’re more vested with what they actually eat and who knows- you may actually save some time if you’ve taught them well. But you want to make it easy and fun for them so give them the right tools. I have three daughters and my girls and I love to cut sandwich shapes with cookie cutters. Also everything tastes better when it’s on a stick, so you might want to have them stack fruits and cheeses and lunch meats on colorful skewers- they love that.
So that’s how to get kids all involved and I also don’t want to forget to tell you about my favorite tool in the kitchen- my microwave. This is an Amana Countertop Microwave and it is a big helper on the after school front. The Touchmatic control system makes it super easy for kids to prepare their own snacks after school. It has 1100 watts of power and 10 power levels so it’s good for large and small quantities. And even as simple as microwave popcorn with a variety of toppings- great choice for after school snacks or get-togethers.”
Candace Rose: How about when it comes to packing a nutritious lunch?
Kelly Lester: “Well, the biggest tip is do it the night before. Don’t wait until the morning of, it’s way too stressful. My easy lunchbox system makes it simple to pack lunches fast, you just fill up the compartments, pop on the lid, stack them in the fridge and they’re ready to grab and go in the morning.
Now what I have here is a scoop of tuna, some colorful veggies and this is a really kid-friendly idea for a lunch box- this is a roll-up made with peanut butter or you could use cream cheese. It also has California raisins inside. Now California raisins are a great choice- they’re fat and cholesterol free. They have fiber, potassium, antioxidants; and they provide lots of energy and nutrients. A quarter cup is equivalent to a fruit. They’re not only good for you, but studies show they can help keep you fuller longer than many other snacks.”
Kelly created this roll-up with peanut butter and raisins, which the kids are sure to love!

TV personality and businessman Bill Rancic joined me recently to share his top travel tips, and to discuss the Babymoon he and wife Giuliana (Rancic) are taking this month!
Candace Rose: You’re a successful businessman, TV host, and a loving husband with a baby on the way. How do you do it all?
Bill Rancic: “It’s not easy. And my wife and I- I tell you one thing we always do is we look at our lives, whether it’s from a business side, from a personal side or from a spiritual side and we kind of reverse engineer the process. We say, ‘in 10 years where do we want to be’? And then we look back at what we’re doing today and we ask ourselves, ‘is what we’re doing today going to get us to where we want to be 10 years from now’? And it kind of helps us design a roadmap on how to navigate life.”
Candace Rose: First and foremost congratulations on the new baby. Can you tell us about the babymoon you and Giuliana have planned?
Bill Rancic: “We’re having a baby via surrogate and that’s going to happen in Denver, and we’re in about a three week window. We’re officially on baby watch, so we’re going to set up a little Babymoon in Vail and just wait for the call. When that little guy comes in the world we’re going to be close by, we hop in the car and we’re going to be there for the delivery, so our Babymoon is going to be dictated by when this guy wants to come in the world. It could be a two day Babymoon or a two week Babymoon, we’ll see.”
Candace Rose: What’s the secret to planning a successful trip for business or pleasure?
Bill Rancic: “We are travelers. My wife and I, we log in a lot of miles, and one thing we’ve learned is to be very efficient when we travel; we’ve learned to expect the unexpected and be very agile. When you’re agile as a traveler you’re able to move quickly when things go array, and also you have to team up with the right people whether it’s airline partners or hotel partners, which is why I’m here today. I’ve teamed up with Citi and Hilton Honors, and we’re launching the Citi Hilton Honors Reserve card which gives us a lot of great benefits when we travel- free upgrades, we quality for free weekend stays and we don’t pay any international transaction fees, so it makes our lives a little bit easier when we’re on the road.”
Candace Rose: You both do a lot of international traveling. How do you manage to keep it fun?
Bill Rancic: “One simple tip- when we go on the road for business we’re often traveling internationally. If it’s a two day business trip I add an extra two days on for us to go explore to see the sights and see what that culture has to offer, so it feels more like a vacation than a business trip when I get back.”
Candace Rose: Do you have any additional tips or information you’d like to share?
Bill Rancic: “Certainly, all my business and travel tips are on HiltonReserve.com, people can go there. But just travel as efficiently as you can and make sure you maximize every mile, every hotel stay. When you’re on the road you want to be rewarded for it, so make sure you’ve got the right credit card which is what we’re doing today.”
Actress and fellow dog lover, Sara Rue joined me recently to discuss tips for exercising with your pet, how to find dog friendly trails for you and man's best friend, and 'Malibu Country', her new show debuting this fall!
Actress Sara Rue shares tips for exercising with your dog and details on her new TV show "Malibu Country" co-starring Reba McEntire and Lily Tomlin!
Candace Rose: We all know how important it is for us to exercise, and it's just as important for our dogs. What can we do to get them fit as well?
Sara Rue: "I think the best thing you can do for your dog is to put their leash on them and take them for a long walk. And whether it's a hike in the mountains or just around your block or your neighborhood, get them out and get them active. Get them consistently moving for 10/15/20 minutes- whatever you think they can take to get them going, because letting them out in the backyard really doesn't do the trick."
Candace Rose: With summer officially here and warmer temperatures on their way, what are the things we need to take with us before heading out for a walk or a hike with our dog?
Sara Rue: "Well, you need to make sure you have water so you and your dog stay hydrated. And if you're going for a long walk you want to bring a snack for yourself and something for your dog. And actually Milk-Bone has this new product which is a trail mix for dogs, and that's something great you can throw in your pocket so they can have something to munch on."
Candace Rose: With the weather getting warmer what's the best time of the day to walk with our pet?
Sara Rue: "I like to walk with my pets as the sun is coming down, like as the sun's setting- so in the early evening; or you can do early morning, but I'm not a morning person so I choose as it's setting. I think the light's prettier that time of day anyway.
This year the American Hiking Association has teamed up with Milk-Bone to create a list of some dog friendly trails and activities in your neighborhood. So it lists from trails all over the country, and you can go to MilkBone.com/TrailMix and get an idea of a great place for you to go with your dog, with your family."
Candace Rose: Do you have any additional tips or information you'd like to share?
Sara Rue: "Stay hydrated and try to pick paths or trails that have a lot of shade, if you do go out midday because the sun can get really hot. Just get out and get moving. There can't be anything bad about that."
Candace Rose: And as for you Sara, where will see you next?
Sara Rue: "I'm gearing up to start a new series called 'Malibu Country' starring Reba McEntire, Lily Tomlin and myself. We'll be on ABC in the fall, Friday nights at 8:30."
