This morning on the Today show, my favorite weather anchor, the one and only Al Roker made a delicious meatless vegetable lasagna that looks absolutely amazing.
To make the fabulous vegetable lasagna, Al Roker told Today’s Take guest co-host Nick Lachey that you will need these ingredients: lasagna noodles, zucchini, yellow squash, red bell pepper, marinara sauce, ricotta cheese, shredded mozzarella cheese, grated parmesan cheese, eggs, basil, garlic, olive oil, onion, red pepper flakes, salt and pepper.
