Registered dietitian Joy Bauer is the queen of healthy and delicious cooking! This morning she stopped by the Today show to help Jenna Bush Hager and busy moms on the go looking to eat healthier! She showed Jenna how to make an amazing chicken black bean chili in the slow cooker that she can easily prepare at home. I may not be a mom, but I know what it means to be busy and on the go, and this dish sounds absolutely AMAZING! This would have been the perfect dish when I was caregiving for my grandmother as I could have just set it in the slow cooker, gone about my day, and had a delicious meal waiting for me when I didn’t have much time to cook and probably snacked on chips, frozen TV dinners, candy and some other not so healthy snacks.
To make the chicken black bean chili in the slow cooker, registered dietitian Joy Bauer mentioned that you will need black beans, reduced sodium chicken broth, kidney beans, a bell pepper (which is chock full of vitamin C), corn, skinless chicken breast, tomatoes, and a few other ingredients.
