One of the things I love most about summer is getting to enjoy fresh vegetables! Zucchini just happens to be one of my absolute favorites, especially since there are so many ways to prepare it. This morning on the Today show, NYC’s Root and Bone’s Janine Booth and Jeff McInnis stopped by to show Dylan Dreyer how to make an amazing Zucchini Tomato Pie with a hash brown crust, heirloom tomatoes, pimiento cheese and more!
