My favorite farmer’s market on the planet has a festival every year where they sell delicious grilled Mexican street corn, and I have to be one of the first in line as they sell out almost immediately. I’ve tried making my own version a few times, but unfortunately it’s never tasted quite as good! Lucky for me and all of you who love Mexican street corn, this morning on the Today show, chef Michelle Bernstein shared the secret to making delicious grilled Mexican corn, and another favorite of mine – grilled shrimp salad!
Chef Michelle Bernstein mentioned that you will need these ingredients to make the grilled Mexican corn: mayonnaise, sour cream, cotija cheese, cilantro, lime, corn and ancho chili powder. To make the fabulous grilled shrimp salad with chilies and crispy tortillas, she stated that you will need shrimp, old bay, salt, olive oil, garlic, Serrano chile, red onion, lime, an indoor or outdoor grill, avocados, and tortilla chips.
