To make the fabulous grilled scallops, squash and eggplant with a tomato vinaigrette, Gregory Zakarian mentioned that you will need zucchini, baby eggplant, olive oil, white wine vinegar, baby tomatoes, scallops, tomato vinaigrette (heirloom tomatoes, basil seeds, dijon mustard, red wine vinegar, olive oil, salt and pepper) and watercress.
