Boar’s Head Bold® Culinary Challenge Winners Share Winning IchiBUNS Dish

When it comes to food, I have to have one ingredient in my house at all times and that’s chicken. It’s healthy, is chock full of protein and is the perfect base for a variety of meals. I eat it for breakfast, and always incorporate in my lunch! Did you know that Americans purchased and prepared over 750 million pounds of chicken prior to July 4th? I was shocked too!

As someone who loves to cook and conduct interviews, I was so excited to talk to Kurt Flaherty and Matthew Johnson, two winning students from the Culinary Institute of America who were challenged by Boar’s Head to come up with a creative new twist on chicken during the Boar’s Head Bold® Culinary Challenge! There were four competitive teams of two and they all came up with these amazing creations (below) using Boar’s Head Brand’s new Bold Ichiban Teriyaki Style Chicken Breast as the primary ingredient.

  • IchiBUNS: Delectable soft steamed buns mixed with vegetables, pineapple and Ichiban TeriyakiStyle Chicken.
  • Ichiban Teriyaki Croquette: A savory croquette that is enhanced with the bold flavor of the Ichiban Teriyaki Style Chicken, creamy sauce and fried crisp.

Don’t these dishes all sound delicious? I feel for the judges, it must have been incredibly difficult to choose a winner! The amazing award-winning team of Kurt Flaherty and Matthew Johnson (seniors at the Culinary Institute of America in Hyde Park, New York) won with their fabulous IchiBUNS dish. Kurt and Matthew were kind enough to join me for an interview recently to share their delicious dish, they talked about what inspired them to create the recipe, and how complex it was for them to come up with an award winning meal. They also discussed the next food trend on the horizon and why they’ve both chosen a career in cooking for others!
