If you’re a social media user, fashion blogger, or love following your favorite fashion blogger/lifestyle blogger, you know how popular brunch is with everyone these days especially with us millennials. If you enjoy Eggs Benedict on Sunday mornings with your best friends, you may be surprised to learn than this extremely popular brunch dish has over 1,000 calories. Lucky for us, one of my favorite registered dietitians and authors, Joy Bauer stopped by the Today show this morning to show us all how to make delicious low calorie “From Junk Food To Joy Food” Eggs Benedict. Joy also offered suggestions on how to cut your calorie intake when ordering pancakes, omelets, sausage, and bacon (my weakness!) at your favorite brunch restaurant.
To make the healthy Eggs Benedict tomatoes, Canadian bacon, poached eggs, water, vinegar, and yellow pepper Hollandaise sauce made with yellow bell peppers, light cream cheese, lemon juice, dijon mustard, kosher salt and a blender. The “Joy Food” Eggs Benedict ended up being 377 calories! Be sure to watch the video below to see how Ms. Joy Bauer made this amazing low calorie dish. Don’t forget to head over to the Today show website for the recipe, so you can make this brunch dish right away.
