One thing I love about summer is fresh zucchini! I love to prepare it in different ways and recently bought a spiralizer just so the zucchini from my garden and from the farmer’s market doesn’t go to waste! If you’re struggling with what to do with your leftover zucchini, you’re in luck. This morning on the Today show, celebrity cook and “The Free Range Cook” author Annabel Langbein stopped by the famed morning program to show Matt Lauer how to make three different vegetarian zucchini recipes (zucchini and feta crostini, black velvet cake with icing) that sound absolutely amazing.
To make the zucchini and feta crostini, Annabel Langbein mentioned that you’ll need zucchini, olive oil, garlic, chili flakes, lemon, feta cheese, basil, salt and pepper, country bread. Next on the list is dessert. Annabel Langbein made an amazing black velvet cake with cream cheese icing! To make this fabulous cake you’ll need a stand mixer and these ingredients:
- raw sugar
- whole wheat flour
- cocoa powder
- pumpkin pie spice
- vanilla extract
- baking soda
- orange juice
- cream cheese
- powdered sugar
