If there’s one snack food that I’m obsessed with it’s definitely salt and vinegar chips. They are my absolute weakness! I know they aren’t the healthiest snack on the block so I try my best to eat them in moderation, but thankfully my favorite nutritionist on the planet says that you can make a healthy version! Today Nutritionist, Ms. Joy Bauer stopped by the Today show this morning to show Kathie Lee Gifford and Hoda Kotb how to make guilt-free salt and vinegar chips and cream of broccoli soup in her latest Junk Food to Joy Food segment.
According to Joy Bauer when you order a cup of cream of broccoli soup in a restaurant it’s going to be around 230 calories, but she has a way that you can make a fiber and protein-rich soup from scratch in under 100 calories. To make the cream of broccoli soup, Joy dished that you’ll need: broccoli, onion, vegetable broth, cannellini beans, salt, pepper, cheddar cheese. Be sure to watch the video below to see just how Joy made her delicious healthy cream of broccoli soup.
If you love salt and vinegar chips as much as I do, Joy Bauer stated you can make a healthier option with parsnips and carrots! She stated you’ll need a peeler, carrots, parsnips, white vinegar, oil, salt and a baking sheet. Be sure to watch the video below to see just how Joy prepared these delicious salt and vinegar chips.
