When it comes to vegetables, like many of you, zucchini is one of my favorites. If you have an abundance of zucchini growing in your garden or you’re heading to the farmer’s market this weekend to pick up a few for dinner this weekend, you’ll definitely want to try the fabulous zucchini dishes that cooking instructor Pamela Salzman prepared on the Today show this morning with Matt Lauer!
If you love pizza, you’ll adore the vegetarian zucchini pizza boats Pamela made on the show! Ms. Salzman dished that to make the easy and delicious vegetarian zucchini boats you’ll need small to medium size zucchini, olive oil, salt, pepper, onions, bell pepper, tomatoes, fresh basil, garlic, parmesan cheese, tomato sauce, mozzarella cheese and more. Be sure to watch the video below to see Pamela Salzman make delicious zucchini pizza boats.
If you’re hooked on french fries, but looking for a healthier alternative, you’ll adore the baked zucchini fries that Pamela made on the Today show using a bread crumb mixture, cheese and seasonings.
Last but not least, don’t forget to check out her zucchini brownies (made with maple syrup) which apparently don’t taste like zucchini at all.
Don’t forget to watch the video below for details and be sure to head over to Today.com/Food for the recipes.
