If you have an abundance of zucchini growing in your garden or you’re heading to the farmer’s market this weekend to pick up a few for dinner this weekend, you’ll definitely want to try the fabulous zucchini dishes that cooking instructor Pamela Salzman prepared on the Today show this morning with Matt Lauer!

If you love pizza, you’ll adore the vegetarian zucchini pizza boats Pamela made on the show! Ms. Salzman dished that to make the easy and delicious vegetarian zucchini boats you’ll need small to medium size zucchini, olive oil, salt, pepper, onions, bell pepper, tomatoes, fresh basil, garlic, parmesan cheese, tomato sauce, mozzarella cheese and more. If you’re hooked on french fries, but looking for a healthier alternative, you’ll adore the baked zucchini fries that Pamela made on the Today show¬†using a bread crumb mixture, cheese and seasonings.
