When it comes to vegetables, I absolutely love zucchini! I can’t get enough of it grilled with olive oil and my favorite spices, and I also love it boiled and topped with parmesan cheese and Tapatio sauce for a quick snack. The latest “zucchini trend” has to be zucchini noodles! We’re seeing zucchini noodles everywhere these days from our favorite blogs to Pinterest, and Instagram too. This morning on the Today show, one of our favorite news anchors, the one and only Natalie Morales shared the secret to making her “Zucchini noodle with pesto sauce” during her “At Home with Natalie Morales” segment.
To make Natalie’s zucchini noodle with pesto sauce, she used “four pretty good size zucchinis” and her trusty Spiralizer. Have you used one? This is the must have kitchen gadget for those of us who love pasta, but are either going gluten free, vegan, paleo or just looking to cut down on the amount of pasta that we eat.

To make the pesto sauce, Natalie used one garlic clove, two to three cups of fresh basil, a quarter cup of pine nuts, a quarter cup of olive oil, and put all of the ingredients into the food processor. Natalie also added low fat chicken sausage to the dish for more protein. Who doesn’t love tomatoes, cremini mushrooms, cannellini beans and onions? I know I sure do! Natalie Morales added these healthy and tasty treats to her pasta dish as well. She then garnished the entire dish with my favorite, parmesan cheese! YUM!!!
