Cauliflower is the hottest vegetable on the scene these days, and rightfully so! It has anti-cancer properties, is a good source of vitamin C, it’s anti-inflammatory, is good for your brain and your heart, and that’s just the beginning! With this week being Vegetable Challenge Week on the Today show, the co-anchors and food contributors are convincing us to eat our veggies with fabulous recipes. Renowned chef Aarti Sequeira stopped by the famed morning program to show Matt Lauer and all of us how to make cauliflower steaks, Aloo Gobi, and cauliflower couscous.
Chef Aarti Sequeira dished on the different kinds of cauliflower in a variety of colors (purple, white, orange and green), and she also shared the secret to making her cauliflower steaks with fresh cauliflower using olive oil, cumin, coriander, lime zest, lime juice, Greek yogurt, salt and pepper, a frying pan, and a baking sheet. She also prepared Aloo Gobi, which chef Aarti Sequeira stated is a “very traditional Indian dish” (to make it you’ll need cauliflower, potatoes, turmeric), and last but not least she made cauliflower couscous. To make it you’ll need a food processor, a skillet, fresh cauliflower, and a few other ingredients.
