Natalie Morales has long been one of my favorite TV journalists. I love watching her on the Today show and her weekly segments on Dateline! This morning the Today show’s news anchor invited cameras into her home for her At Home with Natalie Morales segment, and showed viewers how to make Ropa Vieja (English translation: old clothes), which Morales described as a “classic Latin dish”. It’s beef soaked in delicious spices and seasonings.
To start off, Natalie chopped an onion, red bell pepper and green bell pepper, laid in her plank steak in her trusty crockpot and poured the fresh chopped vegetables, garlic cloves, a tablespoon of vinegar, cumin, fresh tomatoes, a cup of beef stock, a half a bottle of beer and tomato paste on top. How delicious does this Ropa Vieja sound? Yum! Be sure to watch the video below for details, and head over to Today.com for the recipe.
