It’s always a great day when nutritionist Joy Bauer stops by the Today show! I simply adore everything she makes from slimmed down strawberry cheesecakes to low calorie pizza, and earlier today she joined Kathie Lee Gifford and Hoda Kotb to make healthy low calorie vegetable lo mein and and peach melba, which I can’t wait to prepare.

Did you know that two pints of vegetable lo mein typically has 650 calories? Joy Bauer improvised and made delicious vegetable lo mein with zoodles (zucchini noodles) – zucchini, carrots, sesame oil and a few other delicious ingredients that is only 180 calories!

To make Joy Bauer’s amazing healthy peach melba, she first oiled up the peaches on the grill, she added “a dollop of vanilla Greek yogurt”. The whole dessert is only 95 calories! You can also make this with light vanilla ice cream.
