Yesterday we had the pleasure of learning how to make chef Scott Conant’s One Pot Penne Pasta with Fresh Mozzarella, Heirloom Tomatoes and Basil; this morning on “Today” executive chef and Añejo HK owner, Angelo Sosa showed Kathie Lee Gifford and Hoda Kotb how to make a fabulous One Pot Quinoa Risotto that sounds just as delicious!
To make Angelo’s amazing one pot quinoa risotto, he added my favorite ingredients – ginger, olive oil, garlic, Mexican chorizo, nutritious quinoa, stock, water, uncooked shrimp, corn and tomatoes. Angelo Sosa told the ladies that they can even add red wine if they want! The options really are endless with this one pot quinoa risotto dish.
