I absolutely love when nutritionist Joy Bauer is on the Today show, especially when she’s in the kitchen making something healthy and delicious! A few weeks ago Joy shared the secret to making slimmed down versions of  The Cheesecake Factory’s strawberry cheesecake, and General Tso’s chicken. This morning the renowned nutritionist joined Kathie Lee Gifford and Hoda Kotb to make a fabulous healthy Margherita pizza and Strawberry-Mango mint sorbet for summer.

According to Joy Bauer a regular slice of New York style pizza is 500 calories, and that doesn’t include any toppings. Can you believe that one slice is 500 calories? If you love pizza as much as I do, you’ll be intrigued to know that Joy’s slimmed down Margherita pizza is less than 200 calories for the entire pizza. When it came to preparing the pizza, the first thing Joy did was show us how to make an easy, healthy and delicious tomato sauce with tomato puree, onion powder, garlic powder, and oregano. Ms. Bauer also stated that if you’re running low on time, you can always pick up a jar of marinara sauce. To make this delicious Margherita pizza you’ll also need a whole grain low carb tortilla, cheese, basil and a broiler! PS: You can top your pizza with any veggies you’d like.

The next dish Joy Bauer created was her strawberry-mango mint sorbet. According to Joy store-bought sorbet typically has corn syrup and is about 150 calories for half a cup. Ms. Bauer was able to create her amazing sorbet with just one and a half cups of frozen mango chunks, three to four sliced strawberries, 3/4 cup of light coconut milk, and four to five mint leaves pulsed in a blender. She then froze it in a loaf pan for three hours. The strawberry-mango mint sorbet has 75 calories and no added sugar!
