The classic grilled cheese is one of my favorite comfort foods! Not only do I love it on a cold winter’s day, but it’s the perfect snack all year round. Earlier this morning on the Today Show, New York City B&B Winepub chef Josh Capon stopped by the morning program in honor of National Grilled Cheese month and to teach Al Roker and Willie Geist how to make an amazing grilled cheese and bacon sandwich. Doesn’t that sound amazing? My mouth is watering right now, and it’s only a little after 10:30 here on the West Coast!
Josh Capon also shared his must haves for making the perfect grilled cheese and bacon sandwich! He used artisanal bread (brioche aka challah), mayonnaise, Monterey jack cheese, cheddar cheese, Swiss cheese, cooked three peppered bacon, caramelized onion jam, butter and bacon fat before putting this tasty sandwich on the grill.
