For those of us who are busy and on the go at all times, it can be difficult to prepare a healthy and delicious meal! We have every intention of doing so, but we get so busy and stressed that we often just grab whatever is in the kitchen or for those of us who work outside the home, at the nearest vending machine in the office. With March being National Nutrition Month, now is the perfect time to think about better eating, especially for those of us who are busy workaholics (myself included) or who have a family to feed. If you’re searching for easy, healthy and delicious recipes that you’ll adore for spring, you’re in luck! The Skinny Jeans Diet author, Lyssa Weiss joined me for an interview this week to dish on National Nutrition Month, and share healthy recipe solutions for busy people on the go.

Candace Rose: Why is now such a great time to think about better eating?

Lyssa Weiss: “Candace, now is a perfect time because March is National Nutrition Month. It’s a great time to think about spring cleaning or eating, and I have some simple solutions to show you how to do it.”

 

Candace Rose: What are some recipe solutions for busy families on the go?

Lyssa Weiss: “Let’s start with protein. We really should all get a little bit more protein into our diets because protein builds lean body mass and keeps us satiated. One of the easiest ways to do it for all of us who are so busy is with tuna. Starkist White Albacore Tuna is low in fat, low in cholesterol, high in omega-3s; it even has the American Heart Association Heart-Check seal of approval right on it (please see video above for details).”

 

Candace Rose: Are there any other nutrition must haves we need to know about for March (National Nutrition Month)?

Lyssa Weiss: “Yes. We always want to think about eating better when we’re busy trying to feed our families, and one thing is to think about keeping certain staples in our pantry at all times.

One of the staples you will always find in my pantry is Success Whole Grain Brown Rice, and that’s because it’s the original 10 minute fool proof boil-in-bag rice. There’s no mess, there’s no cleanup. It’s easy prep and it’s versatile. I have a recipe for confetti rice and beans with chicken in a tomato (please see video above for details). I can either serve that as a dinner, or I can serve it as a side. I feel good about feeding this to my family because it’s wholesome – 100% whole grain, it’s also gluten free, so this is a great pantry staple.”

 

Candace Rose: Do you have any additional tips or information you’d like to share with us?

Lyssa Weiss: “Yes! There is a great program, it’s called Balance Your Plate With Nestle, and what they do is they show you how to pair a frozen prepared meal with a fresh fruit and vegetable whole grain or low fat dairy choice to balance your plate. At Stouffer’s the chefs in the kitchen cook with quality ingredients, they make their pasta from scratch and they do all the prep for us, which is fantastic.

Here for example I have Stouffer’s lasagna with Meat and Sauce. They have 100% pure beef, they have vine ripened tomato sauce that is hand seasoned and kettle cooked…and all I’ve had to do is pair it with a delicious green salad and I have an easy meal ready to go for my family that I feel good about feeding them.

These are all simple solutions to spring clean your eating for the busy person.”
