Back to school season is definitely upon us, and it can be difficult for busy parents on the go to have enough time to prepare and eat a healthy meal, especially with back to school shopping and running kids to sports practice and other extracurricular activities. Registered dietitian and The Skinny Jeans Diet founder Lyssa Weiss was kind enough to join me for an interview recently to dish on how parents can pack a healthy lunch for their kids and simple meal ideas that kids and their parents will enjoy!
Candace Rose: What are the challenges that families face when it’s back to school time?
Lyssa Weiss: “Well, Candace, this is such a busy time of year, but it’s also a really great time to regroup with your family and get set in some new routines. We want to all do that, but of course the biggest challenges are not enough time and we need some new fresh ideas.
Today, I have partnered up with some great brands to really help get everyone fed and out the door during this back to school time.”
Candace Rose: How can we put together fast and wholesome recipes easily?
Lyssa Weiss: “Well, lets start with what all of us are going to be facing in a few days or in a week or two, which is making lunches for the kids. One of the things I really recommend is to get kids involved in this process, so do it the night before with them and really show them what goes into making a wholesome lunch. One of the things I like to do is keep the sandwich simple. Here we have a turkey sandwich, but I want to give my kids a wow factor…all of us parents do.
One of the great ways to give a wow factor is with a really good beverage and I am loving Motts new eight ounce bottles. We’re always going to be looking for quick easy and convenient options. I love this Minute Ready to Serve rice because it is all of that and more. Here I made bran muffins (please see video for details) and my secret ingredient is the multigrain medley rice, so I feel really, really good about feeding this to my whole family. Candace Rose: Do you have any additional tips or information you’d like to share?
Lyssa Weiss: “I do. We want to get our nutrition from food, but the reality is it doesn’t always happen, so having a great multivitamin to supplement your diet is really smart.
