Healthy Pantry Essentials and Pomegranate Infused Red Wine Vinegar Dressing with Parker Wallace of What’s On Parker’s Plate!

Did you know that May is National Salad Month and National Vinegar Month? If you love salad and vinegar as much as I do, I can only imagine you’re just as happy I am to hear this! There’s nothing like a great salad or an amazing balsamic vinegar to really make dinner perfect. Am I right? If you’re a busy workaholic or mom on the go, and would love to have the time to prep/make a home cooked meal, but are always too busy, you’re in luck! CBS Atlanta’s “culinary goddess” Parker Wallace of What’s On Parker’s Plate joined me for an interview recently to dish on how you can make that perfect meal in a hurry, why canned goods are the perfect pantry essential, her favorite homemade dressing using Pomegranate Infused Red Wine Vinegar and more!

Candace Rose: How can we stock our kitchens so we have everything we need to make a meal in a hurry?

Parker Wallace: “Well, Candace, I always like to say that a well stocked pantry is equivalent to a well fed family. You can make it simple (can being the operative word) by stocking your pantry or your CANtry as I like to call it, with essential canned goods.

Let’s get to the delicious factor first because that’s my favorite part of this – falafel burger – amazing! They are fabulous made with canned garbanzo beans and canned spinach, herbs and spices. Absolutely melt in your mouth delicious!

One of my all time favorites – chicken tacos with a peach and green chile salsa, add in a little bit of red onion, a little bit of cilantro to pack some flavor and every single thing here comes straight from the can (please see video above for details).

A lot of people don’t realize that canned fruits and vegetables are picked and then canned at the peak of their ripeness. They actually hold in all of that freshness and the nutrients, and all of those are absorbed in that can. A U.C. Davis study actually shows that canned fruits and vegetables have just as many nutrients (if not more) than their fresh and frozen counterparts. It’s always a good solution to stock up on pantry essentials and canned goods for your pantry. For more information you can go to

Now, when we’re talking about olive oils and vinegars, always a must have in my pantry and Pompeian has a full line of imported balsamic vinegars and gourmet wine vinegars. My go-to dressing right now is a pomegranate infused red wine vinegar, mixing that with about a quarter cup of the vinegar with some mustard (about a teaspoon), a little fresh garlic, some poppy seeds, just a touch of sugar and then you whisk in some olive oil or you can put it in a mason jar and just shake it up…you’ve got a fabulous salad dressing! And it’s only the perfect time to get creative with salad dressing because May is National Vinegar Month and National Salad Month. Make your homemade dressings, you’ll never want to go store bought items again.

In terms of pantry, get rid of the junk food and stock up on healthy items like Post Great Grains cereal.
